There is just something about mangoes and jalapenos!

Summer time cooking is all about freshness!  There is a carefree, casualness to meal preparation that allows you to enjoy those extra hours of sunlight.  Mr. WR was out back painting the shed.  I should have totally taken a before picture.  We have had the shed for too long to have left it in it's raw state and we are now painting it the same dark grey shade as the front door.  I cannot wait to have our heirloom roses growing up the side and white crepe myrtles at the corners!  Nonetheless, I started on an easy dinner.  The night before I marinated the flank steaks.  So, this evening, I just had to cut some red potatoes and make the salsa.  
So simple.



Ginger Marinated Flank Steak

1 1" flank steak
1/2 cup good ginger dressing
1/4 cup orange juice
soy sauce, a few generous dashes
black pepper, to taste

In a glass dish, combine the steak with the above ingredients.  Let marinate overnight.  To prepare the steak, cook on the grill for about 5 minutes per side for a Medium Rare-Medium doneness.

Mango Jalapeno Salsa

1/2 mango, diced
3 campari tomatoes, diced
1/2 jalapeno, diced
2 spring onions, diced
1/2 lemon, juice
1/2 lime, juice
Kosher salt, a pinch
olive oil, about 2 tbsps

In a medium bowl, combine the above ingredients.  Stir together and refrigerate during meal preparation.  Serve over the flank steak.

Roasted Red Potatoes

6 red potatoes, cut into 1/4s
olive oil
Kosher Salt
Pepper
Italian Seasonings

Preheat oven to 400.  Line a cookie sheet with tin foil and place the potatoes.  Lightly coat with olive oil and the above seasonings.  toss together.  Roasted for about 25 minutes, or until golden and tender.

Sauteed Snow Peas

1 cup fresh snow peas
olive oil
Kosher Salt, pinch
1/2 lemon, juice
1/2 lime, juice


In a small saute pan, heat about 2 tablespoons of olive oil.  Add the snow peas and the salt.  Saute for about 5 minutes.  Squeeze the lemon and lime over the snow peas and serve.

The Rules of Civility by Amor Towles - Book Club #4


BOOK:  The Rules of Civility by Amor Towles

ATTENDED:  Shelley, Cris,  Erin, Dorothy, Lisa

SERVED:  Lisa served a delicious meal of shrimp cocktail, wedge salad (yum!), club sandwiches and prime rib / horseradish / bleu cheese pizza squares.  The coup d’état was key lime meringue pie for desert.  There’s a reason why this woman has a food blog! Champagne, wine and classic cocktails quenched our thirst.

REVIEW:  Everyone enjoyed the book and the story.  Many were surprised early on by the turn of events the plotline took, and we loved Katey’s resilience, strength and overall attitude.  Her character will definitely be a strong contender for “Favorite Female Character” come time for the year-end meeting.  Everyone had a good time asking one another the three questions mentioned in the book that the main characters ask one another on their fateful night. 

BOOK RATING: 
Cris:  ½ a point higher than the last  :P  (“Loved the language, the setting, the quippy dialog. Many, many life quotables.”
Dorothy:  4.5  (“Only rated it low-ish because of the slow start, but enjoyed it more than the last book.”)
Erin:  4.75 (“I appreciated the main character’s ‘chutzspa’! Was equally p!ssed off and love it that the story didn’t wrap up perfectly”)
Shelley:  4.5 (“ I fell in love with the main character after ½ way through the book.  She reminded me of my mom back in the day.”)
Lisa:  4.5  (“I thought a lot of the ‘chance happenings’ of the book. Loved it’s descriptiveness.  It had a slow start which was a negative, but once it started going, it WENT!”

Blue Cheese and Bacon Wedge Salad

Iceberg Lettuce
Red Onion
Tomatoes
Bacon
Gorgonzola cheese
Blue Cheese Dressing

Slice a head of lettuce into six wedges.  Arrange on a platter.  Dice a red onion in small pieces.  Sprinkle over lettuce.  Dice a good, firm tomato into chunks.  Sprinkle over lettuce and onion.  In the microwave, arrange bacon on a plate with paper towels. Top with another paper towel.   Cook one minute per slices.  Let cool and crumble over salad.  Top with .  I served a bowl of good blue cheese dressing (available in the produce section of grocery store) on a bowl in the center.  

Prime Rib Pizza Squares

Small Pot Roast
Package of Onion Soup Mix
Onion
Mushrooms
Beef Broth
Pillsbury Thin Pizza Crust
Boar's Head Horseradish Sauce
Provolone Cheese, sliced
Gorgonzola Cheese, crumbles
Spring Onions, diced

The morning of the party, add the pot roast, soup mix, onion, mushrooms, beef broth, and a can full of water to the crock pot.  Cool on low for 6-8 hours.  To prepare pizza, roll out the dough onto a cookie sheet.  Preheat oven to 400.  Cook the dough for about 10 minutes, until slightly golden and firm.  Pull and shred about one cup of the pot roast.  Remove about 1 cup of caramelized onions and mushrooms from the broth and let drain.  Top the pizza crust with a thin layer of the horseradish sauce.  Top with 4-6 slices of provolone cheese.  Evenly scatter the shredded pot roast, onions and mushrooms on top if the cheese.  Add the Gorgonzola cheese and spring onions.  Bake in the oven for 15-20 minutes.  Let cool slightly and cut into squares.

Mini Italian Club Sandwiches

3 large eggs

2 tablespoons whipping cream

  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon (about) unsalted butter
  • 10 slices bacon
  • 2 (8-ounce) round loaves focaccia bread (7-inch diameter)
  • 1 cup purchased pesto
  • 8 ounces thinly sliced turkey
  • 4 ounces thinly sliced provolone cheese

Directions

Whisk the eggs, cream, salt, and pepper in a medium bowl until well blended. Heat a 6-inch-diameter nonstick skillet over medium-low heat. Brush the skillet with some butter. Pour 1/4 cup of the egg mixture into the pan, swirling to coat the bottom of the pan evenly. Cover and cook until the egg crepe is just set, about 1 minute and 30 seconds. Invert the skillet over a plate, and allow the egg crepe to drop onto the plate. Repeat to make 4 crepes total, brushing the skillet with melted butter as needed and stacking crepes on the plate.
Cook the bacon in a heavy large frying pan until crisp. Transfer the bacon to paper towels to drain.
Preheat a griddle or grill pan over medium-high heat. Cut the focaccia horizontally in half. Place the focaccia cut side down on the griddle and cook until the focaccia is heated through and golden brown on the bottom, about 2 minutes. Spread the pesto over the toasted sides of each halved focaccia. Cover the bottom halves of the focaccia with the egg crepes, turkey, provolone and bacon, dividing equally. Cover with the top halves of focaccia, pesto side down. Cut the sandwich into bite-size wedges. Arrange the sandwiches on a platter and serve.

Guest Bath Makeover


We inherited our house from family about three years ago.  It has been a lesson in love as we have spruced up and remodeled the exterior and interior of the home.  It is a blessing that Mr. WR is super handy and has a natural knack for being able to do most projects himself.  One room that was neglected in the original wave of handiwork is the guest bathroom in the hallway.  The above picture is the bathroom when we first moved in.  It has since received a good scrubbing and we have replaced the crazy sink with a simple white pedestal sink with vintage look taps.  We also have a rattan shade in the window.  What I love most about the bathroom is the original teal tile.  However, that has also been the tricky part.  It is an extremely tough color to match.

I have been toying with the idea to not match the tile but find a color that compliments it.  I like orange and teal.  I have played with some fun orange wall paper samples.  Nothing stood out as a perfect choice.  
I recently gravitated to a green and teal theme.


This vintage 1962 bathroom is an excellent example of teal and jade tiles and has reaffirmed my idea to go with this color scheme.  However I want to keep it fresh and modern.

Then...

Back in May 2011, Chris and I took over ownership of Worth Repeating in West Columbia. It is a high-end antique and furniture consignment store - more or less. However, since we took over, we have decided to shake it up a bit. While the regular customers can still expect the same great, high quality pieces, we have really focused on bringing in new designers, tons of new items, and freshening it up! I have been on a job hiatus this past month and technically start my new job on Monday. yikes. I have gotten pretty comfortable with my pseudo-stay-at-home-mom role. I wish I could say that I have spent the last month dropping Lily off at school, hitting the gym for a morning Spin class, laying out by the pool, staying up too late, and sleeping in. Chris cracks a mean whip. I have been getting Worth Repeating into the 21st century. We have QuickBooks, a POS tagging system, and a new web site. Long hours, lots of blood, sweat, and even some tears. But it has been worth it. No pun intended.

Well....while I have been spending soooo much time at the shop it is hard for a shopper and bargain hunter like myself to not find a FEW items that would look good in our home. Maybe freshen IT up a bit! If any of you know Chris...he likes things to stay the same. Boring. He could re-stage the shop everyday of the week, but our own home is another story. However, I have been a frustrated designer my whole life - lugging my full-sized bed from wall to wall in my childhood bedroom and using some scissors, glue and the stylish Sears catalog to design homes for mock-clients as a young girl. Decorating is in my blood. As is shopping.

The other night Chris made the mistake of slipping out early handing me over the keys to close the shop. He was heading to an auction and was not going to be home for a few hours. Here was my opportunity. All of the fun items that I had my eye on made their way into some large cardboard boxes and into my truck. Twinkle-y things, pink things, bright things, shiny things. I was a kid in a candy store. You see...I love our house. It just felt too formal. Too monochromatic and it needed...something. I made a list of the items I took and gleefully headed home with my treasures. What pleased me more was the bargain that I found. At Worth Repeating we have a lot of amazing designers that rent booth space and devoted consignors. So...we don't technically own all of the products. I added up my items and the price tag was less than $200. Pretty good if you ask me! I also snuck in a few of our finds that have been hanging around the shop. Shhhhh.

I am a big believer in re-styling your home in pieces you already own. Sometimes just by moving the drapes from one room to the other or by replacing the dark, Oriental rug with a lighter seagrass one, it can make all of the difference. I also find comfort and an eye-pleasing quality in symmetry and balance. Then you need a touch of whimsy. Well....I moved around lamps. Tried different paintings. Placed bowls here. Placed them there. I thought it looked pretty good. Then Chris came home with some of his auction finds. Another thing that I am bad about is wanting to keep everything he find for ourselves. But we DO have a business to run....right?

Well....check out my before and afters and let me know what you think. It is still a work in process, but I wanted to show how a few small items and not a very large price tag can make a big difference!
